These little morsels are so easy to make if you like peanut butter. My husband is from Ohio so this is fitting! (Ohio being the Buckeye state if you didn't know). My kids have learned that I love to keep a handy portion of these in the freezer and at night after they have gone to bed, I will sneak a few of these with a glass of milk.

Since going to Rome this summer, I have developed a few bad food habits that I have to save for a special occasion. We were on a company trip so every day we had an enormous buffet breakfast. Every single day that marscapone cheese was staring me in the face, tantalizing my taste buds. It is expensive to buy it here, but now I crave this little sweet breakfast combination.
Take a few tablespoons of marscapone cheese, mix with your favorite jam or spreadable fruit, and spread it all over a croissant! It is heavenly. I also mix in a lot of berries and fruit to make it more healthy. Marscapone cheese mixed with lemon curd is also a great topping for a lot of desserts or muffins.
Try it and you'll be hooked!

I need a new Christmas dessert. I usually make a chocolate spice cake with caramel sauce and whipped creme, but I hear that everyone wants something different. I have made tiramisu from scratch before, and it was fantastic. I think I have found something similar, but also warm and inviting.
Tiramisu bread pudding! I love breading pudding, and this recipe sounds intriguing. I do like having a warm dessert after Christmas dinner. I will take a poll, and maybe make this one.

If you are from the deep south, you are well familiar with and probably love cheese straws. I know I do. My grandmother used to make them all the time, and especially during the Holidays. Now, fortunately, my brother-in-law loves to make them! I've seen a few variations on Southern Living's website, but here's one I think everyone will like.

I just made my first batch of homemade chicken and dumplings this fall season! It's slightly colder now in the mornings, and I was ready for some dumplings! I am very hesitant to publish my sacred, South Alabama recipe that has been passed down to me from my grandmother that lived in the small town of Brantley, Alabama. For those of you that travel down Hwy. 331 to the Gulf Coast know Brantley very well.
Growing up, my family had a Polled Herford cattle farm right on Hwy. 331. All those good Southern recipes I remember from that time of my life are almost sacred to me. I did go looking on the internet hoping to NOT find that dumpling recipe anywhere because I want to call it MINE. I was very sad to see that someone else had already called it ''their' recipe. I am going to tweak mine so I can call it MINE and publish here on my blog soon. I really would like to have all those recipes that were passed down to me remain somehow connected to me and I can call them mine. I somehow equate that as a thread that will still tie me to the past and all those summers on our farm.

I love this salad! Very refreshing and light. The balsamic vinegar and basil brings out the tomato and watermelon flavors. It's amazing! I do add fresh spinach to make it more of a meal sometimes during the summer. You have to have red onion in it as well--the bite of the onion mixed with the acidic tomato and sweet watermelon works very well together. Enjoy!
4 cups watermelon cut in large dices 4 cups tomatoes (about 5 medium) cut in large dices 1 cup thinly sliced red onion 2 tablespoons thinly sliced (chiffonade) basil, divided 1/4 cup extra-virgin olive oil 2 tablespoons balsamic vinegar 1 teaspoon kosher salt Pepper 1. Place the watermelon, tomato, onion and half the basil in large mixing bowl. Drizzle with oil and vinegar. 2. Season to taste with salt and pepper, toss, sprinkle with the remaining basil, and serve.

I have really started using my cast iron skillets again. They were passed down from my grandmother and my mom. They heat evenly, caramelize everything really nicely, and you can transfer it to the oven to finish cooking. Very versatile and not past their prime!

Here is my version of a popular Creamy Jalapeno Dip. I like to stretch out whatever I am making, so I added a lot more olive oil and more lime juice. You can change a little here and there and not affect the taste. Some people don't like cilantro and can change or reduce that. Enjoy!
1/4 cup cup sour cream
1/4 cup mayonnaise
1 cup ranch dressing, or a little more depending on your liking
4 tablespoons lime juice
2 garlic cloves minced
1 tsp. salt
1 tsp. pepper
Couple of splashes of olive oil
3-4 tablespoons fresh cilantro or less if you don’t like a strong cilantro taste
2 jalapeno’s with the flesh and seeds removed, leave them in if you want it hot
Put in blender and see what you think! My whole family loves it!

I am not really a salad person, I am trying to love lettuce! I have found a fantastic salad though that has a lot of stuff going on.... mangos, strawberries, red onion, goat cheese, toasted almonds, and a dried cherry vinaigrette...I added some blueberries also. I added a lot more olive oil to stretch the dressing longer. It is fabulous!
To make the dressing, take one jar of cherry preserves, or any other fruity flavor, and add 1/4 cup white balsamic vinegar, 1/2 cup olive oil, and salt and pepper. You can also add any herbs you like. I like to stretch it out, so I add more olive oil to cut down on the sweetness per portion.
Tonight I am going to make a mango vinaigrette to go over a salad topped with grouper fillets with a mango salsa. I am going to add cilantro and shallots to make it a little more interesting. You can also add jalapeno if you want to make it sweet and hot!
Now that it's summer, you can add all kinds of fruit to your salads and make your own dressing. It makes a lot and it will keep for a while.
